Lemon & Ginger Loaf Cake


With all the hundreds of banana bread pictures that I'm constantly seeing on social media, I thought that I would share my favourite recipe at the moment. As much as I do love banana bread, there's only so much that one person can eat!

This lemon and ginger loaf tastes light, and the icing is an extra treat. I'm hoping to do a bit more baking over the next few weeks, so any new ideas are welcome.

You Will Need
100g of Self Raising Flour
100g of Unsalted Butter
100g of Granulated Sugar/2tbsp of Maple Syrup
2 Medium Eggs
2tbsps of Ground Ginger
1tbsp of Ground Nutmeg
A Lemon
150g of Icing Sugar

To Make
1. In a large mixing bowl, combine the flour, butter, eggs and sugar or syrup
2. Line a loaf tin with baking parchment, and pour the mixture in
3. Bake at 180 degrees for 30-35 minutes
4. For the icing, gradually pour the icing sugar into a bowl of lemon juice, and stir until it reaches a thick consistency
5. Once the cake is cool, pour over the icing and leave to set

  1. This actually looks so good! I'm gonna try it, maybe replacing the flour with almond flour to make it ever so slightly healthier! thanks for the recipe!

  2. This looks so yummy! It seems like everyone has been making banana bread during lockdown but I definitely prefer a slice of delicious lemon loaf cake! Need to try out your recipe soon x
