Weekend Baking | Oat & Currant Cookies

I really love making these as they taste like part cookie, part cake. The texture is really light and the addition of the oats and currents make them feel (almost) good for you. For sugar-free, you can substitute the sugar for maple syrup or honey and if you don't like currants, you could add in chocolate chips or nuts instead. read on to check out the recipe and see some more pictures...

You Will Need
150g of Granulated Sugar
175g of Unsalted Butter
275g of Self Raising Flour
100g of Currants
100g of Oats
50ml of Milk
1 Egg

To Make
1) Whisk the butter and sugar together in a large mixing bowl
2) Add the egg and milk and mix again
3) Stir in the currants
4) Gently fold in the flour
5) Make the mixture into ball shapes and then flatten, and roll in the oats
6) Place on a baking sheet and bake at 180° for 20 minutes, or until golden brown
