Weekend Baking | Berry and Yoghurt Muffins

I haven't baked cakes at the weekends recently and as this past weekend was a bank holiday in England, I thought it was the perfect opportunity to try out a new recipe. As I mentioned in a previous post, I am trying to get back into my sugar-free diet 5 days a week and so, these muffins can be made refined-sugar free really easily. If you're not into that, swap the honey or maple syrup for caster or granulated sugar. Read on to check out the recipe and to see some more pictures...

You Will Need
200g of Self Raising Flour
100g of Mixed Berries
50g of Unsalted Butter
2 Medium Eggs
2tbsps of Honey or Maple Syrup
3tbsps of Sunflower Oil
2tbsps of Natural Yoghurt

To Make
1) Melt the butter and add it into a bowl, along with the flour, eggs, honey, oil and yoghurt
2) Stir the mixture gently together with a fork
3) Add the berries and stir gently again
4) Pour the mixture into muffin cases and bake at 180° for 20-25 minutes, or until golden brown
