Weekend Baking | Cherry Bakewell Cupcakes

When I was younger, I could easily eat a whole packet of shop-bought cherry bakewells. Now, I'm a bit more controlled over the amount of sugar I eat, but for a treat, read on to check out my cherry bakewell cupcake recipe...

You Will Need
2 Medium Eggs
100g of Self-Raising Flour
100g of Caster Sugar
100g of Unsalted Butter
100g of Icing Sugar
12 Glace Cherries
Strawberry Jam

To Make
1) In a bow, mix together the eggs, flour, caster sugar and butter
2) Transfer the mixture to cupcake cake cases and bake at 180° for 15 minutes
3) Once the cakes are out of the oven and cool, use an apple corer to take the middle out of the cakes
4) Spoon the jam in the holes
5) Mix the icing sugar with a little bit of water and pour over the top of the cupcakes
6) Decorate with a cherry
