Afternoon Tea | Raspberry Cupcakes

Who doesn't love an afternoon tea? It's the perfect excuse to get together with friends whilst eating cake and drinking tea or champagne. I did some baking for an afternoon tea I hosted last week and wanted to share these easy raspberry cupcakes with you. I made them in about 30 minutes the night before and then quickly decorated them on the day. Read on to find out how to make them and to check out some more pictures...

You Will Need
Makes 12-15
3 Medium Eggs
200g of Self-Raising Flour
200g of Caster Sugar
200g of Unsalted Butter
Raspberry Jam
Fresh Raspberries
Icing Sugar

To Make
1) Whisk together the eggs, flour, caster sugar and butter and spoon the mixture into cupcake cases
2) Bake at 180° for 15-20 minutes 
3) Once cooled, using an apple corer, take a chunk out of the middle of each cupcake
4) Spoon the raspberry jam into the hole and cover with fresh raspberries
5) Sift some icing sugar over the top and serve
