Lunch | Quinoa & Mackerel Salad

Today I wanted to share a quick and easy lunch idea. I used to think of quinoa as quite bland and boring until I discovered the mixed grains which have a different texture and taste. For me, they still need a bit of extra something and some good flavours so read on to check out my recipe...

You Will Need
1 Cup of Mixed Quinoa
1 Tin of Mackarel
Baby Plum Tomatoes
1/4 of a Cucumber
Green Olives
Natural Yoghurt

To Make
1) Cook the quinoa as you would rice, leaving it well alone for 10-15 minutes in a saucepan of boiling water
2) Once cooked, drain the quinoa and add the fish, and chopped tomatoes, cucumber and olives
3) Tear the herbs and gently stir in
4) Serve with some natural yoghurt and salt and pepper

  1. This sounds so good! I've not quite got the hang of cooking quinoa yet I don't think (or maybe I'm just not a fan haha) but I eat loads of cous cous which would work too!

  9. Looks lovely! I love salads like this but I don't eat any meat or fish so it would just be Quinoa for me which is really yummy! I love seeing more and more people featuring things like this online - it makes such a difference and I really think it inspires more people to eat healthy!
