Now that the weather is a bit colder, I've been making some filling, warm and healthy dinners and today I wanted to share my recipe for baked cod and rice. It's got lots of vegetables packed inside it and doesn't take long at all to make. Read on to check out some more pictures and find out the recipe...
You Will Need
1 Mugful of Brown Rice
250ml of Vegetable Stock
Cod Fillet
50ml of Passata
50g of Fresh Tomatoes
Peas
Mushrooms
Mixed Peppers
Red Onion
Garlic
To Make
1) Lightly fry the chorizo in a pan (without oil). Once it's browned, set aside
2) Place the cod on a baking tray with a drizzle of oil and bake on 220 for 15-20 minutes
3) Add the onion, mushrooms, peppers and garlic to the pan for 2-3 minutes then add the rice and chicken stock. Simmer for 20 minutes
4) Stir in the passata and add the fresh tomatoes and peas. Leave for 5 minutes
5) Add the cod and serve with chopped parsley
