Weekend Baking | Spiced Apple Loaf


I was feeling in an autumnal mood this week so I decided to make the most of the seasonal apples by making a spiced apple loaf. It's not something that I've made a lot before, I prefer to use bananas in a loaf but I added some spices, sultanas and almonds to make it taste even better. As per usual, this recipe is refined sugar-free but you could add 150g of golden caster sugar if that's not for you. Read on to find out the recipe and to see some more pictures...


You Will Need
300g of Self Raising Flour
150g of Unsalted Butter
3tbsp of Honey or Maple Syrup
100g of Cooked, Chopped Apples
1tbsp of Ground Cinnamon
1tbsp of Ground Ginger
50ml of Orange Juice
50g of Sultanas
30g of Flaked Almonds
1 Egg


To Make
1) Place the flour, butter, honey and egg in a bowl and mix until combined
2) Add the orange juice and stir until the mixture is looser 
3) Add the ginger, cinnamon, sultanas and apples and transfer to a loaf tin
4) Sprinkle the almonds on top and bake at 180 for around 1 hour or until cooked through
