Food | Summer Salads


When the weather is warmer and I've filled myself up as much as I can on ice-cream, sometimes what I want for lunch or dinner is a salad. But not just a boring one, I want a salad filled with tasty food and flavour and so today, I wanted to share some of my favourite recipes for this time of year. Read on to check out what they are...

Pearl Barley, Chicken & Feta
This is a really good filling salad for when you are on-the-go. It's so easy to make and can be prepared in advance if you are planning on taking it to work or for a picnic the next day. Simply boil some water and cook the pearl barley (like rice), in a griddle pan, grill chicken and any vegetables you want in the salad. Wait to cool before refrigerating and serve with chopped black olives, tomatoes and crumbled feta cheese. 

Spicy Noodle Salad
Noodles are my favourite lunchtime dish as they only take a couple of minutes to prepare and are really filling (I use the wholewheat ones as they have a lower GI which means I feel fuller for longer). I mix soy sauce with chilli, garlic, lime and honey and then pour over the noodles. Add some greens and whichever protein you prefer to serve. 

Grilled Halloumi & Avocado
I've been making this for the past couple of days and it tastes really good! I cook some mixed quinoa in a pan of water and grill some halloumi for the top. I also chop up some greens and dice an avocado before combining it all and serving with some sweet chilli sauce.
