Weekend Baking | Royal Wedding

I don't know if you've heard but there's a very special event happening in the UK this weekend! As I'm off to a Royal Wedding party I thought about what I could make, and what else is more British than jam tarts? I've added some fresh berries and they also can be served with cream for an indulgent treat (it's a special weekend!). Read on to check out how to make them and to see some more pictures...

You Will Need
Makes 6 Tarts
200g of Plain Flour
100g of Unsalted Butter
100g of Strawberry Jam
100g of Raspberries
100g of Blueberries
Icing Sugar

To Make
1) For the pastry, rub together the flour and butter until it resembles breadcrumbs. Add a splash of water to combine and roll out onto a floured surface
2) Line your tart cases with the pastry and blind bake for 15 minutes at 180°
3) Spoon your jam into the tarts and bake for another 15-20 minutes or until the pastry is golden brown. Leave to cool
4) Decorate with the raspberries and blueberries and sift some icing sugar over the top to finish

Are you celebrating the royal wedding?
