Weekend Baking | Bakewell Cake


I visited the pretty town of Bakewell on a trip to Derbyshire at the end of last year and I was blown away with the sheer amount of puddings that were on offer and how delicious they all looked. Today, I've used the inspiration from that trip for my Bakewell cake, encompassing the flavours from the classic pudding and tarts and putting them into a cake.
As with most of my weekend baking posts, this recipe is refined sugar free. I used maple syrup as a substitute for the sugar but honey would work just as well. Read on to check out how to make it and some more pictures...


You Will Need
80g of Self Raising Flour
80g of Unsalted Butter
80g of Ground Almonds
3tbsps of Maple Syrup
1 Egg
Fresh Raspberries
Flaked Almonds

To Make
1) Put the flour, butter, ground almonds, maple syrup and egg in a large bowl and mix until the ingredients form a batter
2) Pour the cake batter into a round tin and push the raspberries into the mixture
3) Sprinkle the flaked almonds over the top 
4) Bake at 180° for around 20-25 minutes or until golden brown

  17. This looks incredibly delicious!! I love the gorgeously quaint town of Bakewell, it's always top of my list of places to visit when back in the UK. There are so many beautiful locations to walk around, plenty of tea rooms and a great vintage store hidden away too!

    I can't wait to try this recipe!
