Weekend Baking | Easter Loaf


Happy Easter weekend! Today I wanted to do an Easter themed weekend baking post but I was finding it quite difficult to come up with something that didn't include chocolate coated cereal and mini eggs (not that there's anything wrong with that at all!). I found a recipe for a currant loaf online but I've modified it slightly so that it doesn't include too much sugar. It's perfect to eat in the afternoon with a cup of tea or for a weekend morning, toasted with some butter or jam. Read on to check out the recipe and how I made it....



You Will Need
500g of Strong Bread Flour
200g of Currants
75g of Melted Butter
175g of Milk
10g of Fast Acting Yeast
1tsp of Salt
2 Eggs
1 Orange
2tbsps of Honey

To Make
1) Put the bread flour, yeast and salt in a bowl and make a well
2) In the well, add the melted butter, milk and eggs
3) Mix together and knead for 10 minutes
4) Leave for 2 hours in a covered and oiled bowl
5) Add the currants and knead together. Leave for another 45 minutes
6) Break the dough into eight pieces then place them alongside each other in a loaf tin. Cover it and leave for 30 minutes
7) Bake for 35 minutes at 150°
8) Juice the orange into a pan then add the honey, heat until the mixture resembles marmalade
9) Once the loaf is done, spread the orange mixture over the top and serve immediately

  18. Oh yum, that looks beautiful! I especially like that it's chocolate free so you can have a little something other than chocolate on Easter (we got so much chocolate, haha!)
