Weekend Baking | Cinnamon Duffins



What's better than a doughnut and muffin? A duffin of course! These tasty inventions are perfect for when you can't decide what sweet treat you want. I was going to make the jam versions but decided to flavour them with cinnamon instead as it was easier to keep them refined sugar-free that way. They're so easy to make and even easier to eat so read on to check out how to make them...


You Will Need
For The Mixture
200g of Self Raising Flour
125g of Melted Butter
180ml of Milk
2tbsps of Maple Syrup
2 Eggs
1tbsps of Ground Cinnamon
For The Coating
15g of Melted Butter
2tbsps of Set Honey
2tbsps of Ground Cinnamon

To Make
1) Whisk the eggs, milk and maple syrup together until frothy
2) Add the flour, melted butter and cinnamon and gently fold together
3) Line a muffin tray with cupcake cases and fill them up almost to the top with the mixture
4) Bake at 180° for around 20 minutes or until golden brown
5) Once they are taken out of the oven and cooled, mix together the melted butter, set honey and ground cinnamon until they form a paste
6) Take the duffins out of the cupcake cases and spread the coating over the top of them

  2. Oh my gosh, these both look and sound incredible - I can almost smell them through the screen! I've literally just eaten a couple of slices of cinnamon and raisin toast and so I'm craaaaving more cinnamon haha. Yum! Well done!
