Afternoon tea is one of my favourite treats and so this week, I wanted to share my recipe for scones. As my baking is primarily refined sugar free, I've put in some chopped cherries for some sweetness but you could also substitute them for other fruits if you wanted. Read on to check out some more pictures and find out how to make them...
You Will Need
100g of Self Raising Flour
75g of Strong Bread Flour
45g of Unsalted Butter
85ml of Milk
50g of Chopped Cherries
A Pinch of Salt
1 Egg
To Make
1) Put both the flours and salt into a mixing bowl. Add the butter and rub the mixture together until combined
2) Make a well in the bowl and pour in the milk. Mix together then stir in the cherries
3) On a floured surface, stretch out the mixture and using a cutter, press out as many circles as you can, making sure the mixture is at least 1 inch high
4) Brush the tops of the scones with some beaten egg and bake at 200° for around 10-15 minutes or until golden brown

DeleteOh my goodness these look gorgeous. I plan on baking a lot more this year, but have only done so really with cakes and the like so I'd definitely give these a try. They're really similar to Welsh cakes as well apparently, and they look divine.
