Lunch | Pasta Dishes


I'm always looking for new lunch ideas as most of the time, a sandwich just doesn't cut it for me. I like to have something that's filling, not too unhealthy, easy to make and can be multiplied so I can have it for more than one day. In Italy, pasta is pretty much only eaten for lunch and not in the evening as it's heavy on the stomach and by eating it at lunchtime, will fill you up for the afternoon. Read on to check out my three pasta lunch ideas...

Pesto Pasta
I definitely go through phases with pesto, sometimes I'm not really bothered about it and sometimes I could have it for every meal of the week! Making your own pesto is also really easy and it tastes so much better fresh and not out of a jar. I blend a large handful of basil, 50g of cashew nuts, 2 cloves of garlic, Parmesan cheese and black pepper before stirring it into the cooked pasta. 

Sardine Pasta
This is such a quick and easy dish that not only tastes good but is healthy and filling too. I cook some spaghetti in a saucepan and drain before mixing in some sardines, black olives, tomatoes and red onion. I then sprinkle some breadcrumbs over the top for added texture. 

Spring Pasta Salad
This is one of my go-to dishes in the warmer months and can be eaten both hot and cold. It also pretty much works with all types of pasta so you can use whatever you have in your cupboards. I add cubed feta cheese, black olives and cherry tomatoes to cooled down pasta and then sprinkle some basil over the top.
