Weekend Baking | Blueberry Muffins


It's been ages since I've made muffins but I had a craving for them this week that I just had to satisfy! 
I'm not generally too fussy when it comes to flavours but this time I went for blueberry and Greek yoghurt which tasted really good. The recipe below contains sugar but two spoonfuls of honey or maple syrup can be used as an alternative if you're trying to be sugar free. Read on to check out the recipe...


You Will Need
(Makes 8-10)
200g of Self Raising Flour
80g of Caster Sugar
30g of Melted Butter
2 Eggs
3tbsps of Sunflower Oil
50g of Greek Yoghurt
75g of Blueberries

To Make
1) In a large mixing bowl, add the flour and stir
2) Add the butter, eggs, oil and yoghurt and mix until smooth
3) Gently stir in the blueberries
4) Spoon the mixture into muffin cases and bake at 180° for 15-20 minutes

  13. This looks delicious! There's honestly nothing like a delicious blueberry muffin. That's total comfort food. And I like the addition of greek yogurt! I recently discovered almond milk greek yogurt and I wonder if that would do the trick...
