Weekend Baking | Sugar-Free Oat Cookies


I've been baking again this week! After cutting out sugar, one of the things that I missed the most was having something sweet with a hot drink in the afternoon, so I looked back through some of my old recipes to see what I could do. I chose to modify my Oat & Raisin cookie recipe (original here for anybody who's craving sugar) as I can totally convince myself that the addition of the oats and currants make a healthy snack! Read on to check out how to make them...


You Will Need
150g of Unsalted Butter
300g of Self Raising Flour
75g of Raisins
75g of Rolled Oats
2tbsps of Honey
A Splash of Milk
1 Egg

To Make
1) Mix the butter and honey together
2) Add the egg and mix again
3) Stir in the raisins and flour
5) Add a splash of milk so that the mixture isn't too firm
5) Make the dough into balls shapes and roll them in the oats
6) Place on a baking sheet and cook for 20-25 mins at 180°

  16. I LOVE that this only has 2 tbsp of honey in it! I try to make everything we bake as sugar free as possible. Once you take out added sugar, you realize how overly sweet everything we eat it! These look like the perfect snack with a hot cup of tea. Thank you so much for sharing another delicious treat we can add to our healthy arsenal!
