Weekend Baking | Dutch Blueberry Pancakes


I made these Dutch blueberry pancakes last weekend and was so obsessed with them that I've made them again and again since! As anybody who's seen my food posts before, I'm a huge fan of pancakes but usually stick to the American version when I use blueberries as it's a recipe that's embedded in my mind (check out the recipe here). Dutch pancakes are a little different as they're baked in the oven instead of cooked on the stove but there's no flipping or multi-tasking involved and whilst the pancake was cooking, it gave me time to make the blueberry compote. You Will Need
Serves 2
80g of Self Raising Flour
30g of Unsalted Butter
125ml of Milk
2 Eggs
75g of Blueberries
1tbsp of Honey
1tbsp of Lemon Juice

To Make
1) Whisk the flour, butter, milk and eggs together until smooth
2) Using a skillet, or an ovenproof pan, heat some butter or oil until really hot and pour the pancake mix into it. Bake at 220° for about 20 minutes
3) Whilst the pancake is in the oven, heat the blueberries, honey, lemon juice and a splash of water in a pan until the mixture is thick
4) Remove the pancake from the oven and pour over the blueberry compote

  18. Ahhh this gives me so much nostalgia! My dad used to make dutch pancakes when I was little and I LOVED them. I want to make this asap! And blueberries are always a go to in our house. It's the perfect sweetener!
