Weekend Baking | Berry Cobbler

After a freezing cold and rainy week, I really needed something comforting to eat whilst snuggled up on the sofa after a long day. I hadn't made a cobbler in a while so I thought that I would give it a go. It's a bit like a crumble but in my opinion, more substantial as there's basically scone mix on the top instead of crumble.
Like all my other baking recipes this month, it's refined sugar-free so read on to check out how to make it and to see some more pictures...

You Will Need
250g of Mixed Berries
3tbsps of Honey
100g of Self-Raising Flour
40g of Unsalted Butter
50ml of Buttermilk
1 Egg
A Pinch of Salt

To Make
1) In a saucepan, add the mixed berries, honey and a splash of water. Simmer on a low heat for around 10-25 minutes
2) Meanwhile, rub the flour, salt and butter together until the mixture resembles breadcrumbs
3) Stir the egg and buttermilk together then add to the flour mixture and combine
4) In an ovenproof dish, pour the berry mixture in and then spoon the dough on top
5) Bake at 180° for 20-35 minutes or until the top is golden brown

Have you done any baking this week?

  13. YUM. This looks like the most perfect winter comfort food right now. Cobbler is super nostalgic for me because my mom used to make it all the time when I was little! I think I might have to revisit those memories soon :).
