Weekend Baking | Apple Tarts


I've had an amazing-food filled couple of weeks where I've definitely filled my mince pie quota for at least the next few months. Now, I'm back to attempting to be refined sugar free 5 days a week which I know will be hard at first but I'm already planning some tasty alternatives which I hope to share on here. This week, I felt like I needed a bit of comfort and what's better than apples and pastry?! Read on to check out my recipe and pictures for my refined sugar-free apple tarts.... 


You Will Need
Makes 2 Medium Tarts
4 Large Eating Apples
100g of Plain Flour
50g of Unsalted Butter
4tbsps of Honey or Maple Syrup

To Make
1) In a mixing bowl, rub the flour and butter together until it resembles breadcrumbs. Add a splash of water and bring it together. Refrigerate for 20 minutes
2) Core and peel 2 of the apples. Cut them into small chunks and heat them gently in a saucepan with the honey and about 50ml of water
3) Roll out the pastry quite thinly and line two tart tins with it. Blind bake for about 10-15 minutes or until part cooked 
4) Once the apple mixture has condensed down, spread it across the base of the tarts
5) Cut the remaining two apples into thin slices and place in circles around the tarts to resemble a flower
6) Bake at 180° for around 15-20 minutes or until the apples on the top are cooked

  21. I'm also trying to cut out refined sugar as much as I can this year round, and it's been hard to far. In fact, I think the only sweet thing I've allowed myself was two bars of dark chocolate at the start of the year. However, I have such a sweet tooth I think it'd really be a shame to never indulge, and so a recipe like this is so perfect! It looks so gorgeous, and I'd definitely love to give it a try when I get back to my university flat and can start baking again. I'll have to let you know how it goes!
