Weekend Baking | Sugar Free Banana Bread


Earlier this year, I gave up eating chocolate for lent. I also gave up refined sugar but only during the weekdays as I knew that I wouldn't be able to stick it out for all that time! My skin cleared up completely and I stopped craving chocolate so when I ate a chocolate egg on Easter Sunday I had such a reaction to it that I had to ration how much I ate the days after. 
Throughout the summer though, I went back to my biscuit eating habits and my skin got worse again so I'm back on the refined sugar free (weekdays only) eating plan! I still crave it though and so today, I wanted to share my banana bread recipe which tastes just as good, gets rid of the sugary cravings and is full of great ingredients. You Will Need
120g of Self Raising Flour
20g of Rolled Oats
50g of Unsalted Melted Butter
50g of Currants
3 Ripe Bananas
A Splash of Milk
1 Egg
Ground Cinnamon
Ground Ginger

To Make
1) Mash the bananas in a bowl, add the egg, butter and a splash of milk. Mix together
2) In another bowl, add the flour, oats, currants, cinnamon and ginger then add the wet ingredients
3) Mix everything together and pour into a loaf tin
4) Bake at 180° for 35 minutes or until cooked through
