Weekend Baking | Fig & Almond Tart


I've never really been much of a fan of figs before this week but as they are in season, I kept seeing lots of recipes featuring them. In my opinion, there's not much that can't be improved by cake and so I thought that I would give these fig & almond tarts a go. I've decorated them with some honey and flaked almonds but they also taste really good with some ice cream or, if it's a little colder, some custard! Read on to check out how to make them...

 


You Will Need
Makes 4 Tarts
For The Pastry
100g of Plain Flour
50g of Unsalted Butter

For The Filling
50g of Ground Almonds
50g of Butter
50g of Caster Sugar
1 Egg
3 Ripe Figs
Flaked Almonds

To Make
1) For the pastry, rub together the flour and butter until the mixture resembles fine breadcrumbs
2) Add a splash of water and combine into a dough, refrigerate for 20 minutes
3) After the dough is cooled, roll out and line 4 tart cases. Blind bake for 10 minutes at 200°
4) Whilst the pastry is in the oven, make the filling by mixing the butter and sugar together then adding the eggs and ground almonds
5) Line the pastry cases with the filling then bake at 180° for about 20 minutes
6) Take the tarts out of the oven and decorate with the finely sliced figs and flaked almonds, return to the oven for 5 minutes
7) Serve with honey and ice-cream
