Today I've got a savoury weekend baking post to share. It's been years and years since I've last made scones but I really wanted to give them a try again and see if I could still make them. I read lots of recipes trying to find the best one with the easiest combination of ingredients and finally think I've found it! This was also my first time making red onion marmalade, I've made a few chutneys before and it's pretty much the same process and it tastes so good! Read on to check out how to make everything...
You Will Need
For The Scones
100g of Self Raising Flour
25g of Butter
25g of Grated Cheddar Cheese
75ml of Milk
For The Red Onion Marmalade
1 Sliced Red Onion
2 Sliced Cloves of Garlic
25g of Brown Sugar
50ml of Balsamic Vinegar
To Make
1) For the scones, rub the butter and flour together until the mixture looks like breadcrumbs
2) Add the cheese and milk until and combine until the mixture looks like a dough
3) Roll the dough out on a floured surface, keeping it quite thick and using a round cutter, cut as many scones as possible
4) Brush the tops with some milk or egg and bake at 220° for 15 minutes or until golden brown
5) For the marmalade, cook the onion in a pan with some oil for 15 minutes
6) Add the sugar, garlic and a splash of water and cook for another 10 minutes before adding the balsamic vinegar and leaving to simmer for about 20 minutes until the mixture is thick
7) Serve the red onion marmalade with the warm cheese scones
