Today I wanted to share my recipe for Zucchini Parmesan Crisps. They are so tasty and really easy to make. I've seen loads of similar recipes that involve frying and I didn't want to do that so I baked these in the oven and they taste just as good and they don't have any extra oil. Read on to check out the recipe...
Ingredients
Olive Oil
1 Courgette
50g of Grated Parmesan
50g of Fine Breadcrumbs
Salt
Pepper
Method
1) Thinly slice the courgette and leave on absorbent paper towels for about 30 minutes to dry them out
2) Cover the slices in olive oil and in a separate bowl, mix the other ingredients together and cover the oiled courgettes in the mixture
3) Bake at 220 for around 15-20 minutes or until golden brown
4) Leave to cool for around 5 minutes before eating
