I've been wanting to do a blog post like this for ages as I love watching these types of videos and reading similar blog posts. It's really interesting to find out what other people eat in a day and sometimes it gives me some great ideas on what to make during the week. I hope you enjoy...
Breakfast
For breakfast I made oat bran porridge. I either make it with semi-skimmed or almond milk which tastes so much better than water. I have banana and cinnamon on top and always have a cup of strong tea!
Mid-Morning Snack
These maple and walnut granola bars are the perfect snack (see how I make them here) and they keep me going until lunchtime. They taste indulgent but have some great healthy ingredients so I don't feel bad about eating them!
Lunch
This is my new favourite recipe. I mix cannellini or butter beans with pesto and spinach. I like to have some olives with it too. The beans make this lunch taste really filling so you won't go through the afternoon looking for sweet treats and sugar (which I often do!)
Dinner
For dinner I made a stir fry full of vegetables and wholewheat noodles. I sometimes neglect vegetables so this is a great way to pack in as many as you can!
Evening Treat
I love a bit of baking and this blackberry and apple cobbler is one of my winter favourites. It hardly takes any time at all to prepare, all you really have to do is chop up some fruit and make the cobbler topping. A great dessert to have over the colder months!
