Today I wanted to share my Christmas Pudding Biscuits recipe, they are so easy to make and perfect for this time of year! I keep the biscuit mixture frozen in the freezer so I can make these biscuits all through the festive season! Hope you enjoy...
Ingredients
For the biscuits
250g of Self Raising Flour
175g of Soft Brown Sugar
1 Egg
100g Butter
2tbsp of Golden Syrup
2tbsp of Ground Mixed Spice
For the Icing
100g Icing Sugar
3tbsp of Water
Green Sugar Paste
Red Sugar Paste
Method
1) Mix butter, flour and mixed spice together
2) In a separate bowl, whisk egg with golden syrup then add sugar
3) Combine all ingredients together to form a dough, leave to cool in a fridge for 20 minutes
4) Roll out dough and cut out circles from mixture
5) Bake in oven at 180 for 10-12 minutes and leave to cool
6) Make the icing by mixing together the icing sugar and water and pipe onto the biscuits
7) Cut out holly shapes with the green paste and roll berries with the red, alternatively you could buy edible holly decorations from a supermarket or specialist cake store :)
