Hi everyone, hope that you've had a great week! Today I wanted to share my strawberry and almond tart recipe, I had some leftover pastry in the freezer from the apple tarts a few weeks ago and as strawberries are one of my favourite fruits, I had to make these! My tarts have a frangipane mixture in the middle but cooled custard or vanilla cream would work just as well. Hope that you enjoy...
You Will Need
Makes 6 Mini Tarts
Chilled Shortcrust Pastry - Check out my favourite recipe here
100g of Butter
1 Egg
100g of Caster Sugar
100g of Ground Almonds
1 tbsp of Plain Flour
150g of Strawberries
4tbsp of Strawberry Jam
Method
1) Roll out the shortcrust pastry and line four mini tart tins
2) Blind bake at 180 for 15 minutes
3) Prepare the filling by mixing the butter and sugar together then add the egg, flour and ground almonds
4) When the pastry is baked, wait for cool then spread a tbsp of strawberry jam at the bottom then fill to top with the frangipane mixture
5) Bake at 180 for 30 minutes then remove and wait to cool
6) Slice the strawberries and arrange on top
7) Serve and enjoy!

DeleteI was wondering if the strawberries were just on top or incorporated into the recipe. Nice to read it is, and it sounds delicious!
ReplyDeleteI might suggest you take a single large strawberry and with the stem attached, slice it thinly, fanning it out for a pretty display ;)
