Recipe - Giant Mince Pie

Makes 1 big mince pie

125g plain flour
55g butter
Pinch of salt
3 tablespoons cold water
          1 medium jar of mincemeat         

This is a very easy recipe to make in the lead up to Christmas. Instead of making individual mince pies, I thought it would be easier to make a giant mince pie/mincemeat tart. It looks better and takes about half the time!

I used a shallow tin with a removable bottom which I greased before use.

      1)   Set oven to about 190°C/375°F/ Gas Mark 5

2)      Sift the flour and salt into a bowl

3)      Cut the butter into cubes and add to the mixture

4)      Rub the butter into the mixture until it looks like fine breadcrumbs

5)      Stir in the water until the mixture binds together

6)      Roll out the dough to fit tin, make sure some dough is left over

7)      After lining tin with the pastry, fill with the jar of mincemeat

8)      Cut the remaining pastry into long strips and arrange in a lattice shape on top of the tart

9)      Bake for 20/25mins until golden brown
